The Weekly Sear #002: The Shell Is Cheese
The quesadilla where the cheese IS the tortilla. 59g protein.

Squad, somebody asked what we do about tortillas, and Chef Sear answered by melting a 4-ounce sheet of cheddar into lace and folding it like it owed him money. The shell is cheese, the filling is beef, and the whole build lands at 59 grams of protein. That's not a quesadilla, that's a statement.
This week's recipe: Carnivore Quesadilla
This one exists because the cross-section shot broke our own team's brain. Cheddar, melted flat in a pan, turns lacy at the edges and sets into a foldable shell. It behaves like a tortilla, it tastes like the best part of the nachos, and it carries half a pound of seasoned beef.

The one thing that ruins this recipe is impatience. The rest after folding is where the shell sets. Fold it, press it, then take your hand off the spatula and count to sixty. Cut early and it slumps. Wait, and it holds its shape like it was baked.

Let's look at what the data actually says.
The idea sounds mechanical: keep feeding the fire, keep the fire hot. But when researchers measured actual energy expenditure instead of asking people to guess, the pattern did not hold. A review by Bellisle, McDevitt, and Prentice in the British Journal of Nutrition (1997) went through the studies that used whole-body calorimetry and doubly labeled water, the careful measurement tools, and found no meaningful effect of meal frequency on total energy expenditure. The associations in survey data tend to fall apart under measurement problems like underreporting.
The calibrated takeaway: your daily totals matter. The clock, much less so. If six small meals keep you comfortable, eat six. If two big plates keep you full and sane, eat two. High-protein meals help either way, because protein keeps you full longer than the same calories from other sources, which is exactly why a two-meal day works for so many people in this Squad.

Macro Mama's prep tip: brown once, eat three times
Ground beef is the workhorse, so stop cooking it one meal at a time. Sunday, brown 3 pounds of 80/20 with salt in your biggest pan, drain it, and split it three ways: one container for tonight's quesadilla, one for a ground beef cheese bowl midweek, one into the freezer flat in a zip bag so it thaws in minutes. Fifteen minutes of work, three dinners staged. Label the freezer bag with the date. Future you does not remember anything.
