Macros per serving, estimated from USDA-typical values. This one is fat forward and low protein on purpose. It is a rich topper or a Squad-day novelty, not a protein plate. Spoon it over a steak to round out a real protein meal.. Serves 2. Estimated cost about $6.00 for the full recipe.

Steps

  1. 1

Heat the oven to 450 F and set the bones marrow side up on a foil-lined sheet pan.

  2. 2

Roast 15 to 20 minutes until the marrow puffs, turns glossy, and just starts to bubble at the edges. Do not let it liquefy and run out.

  3. 3

Pull the pan, crack flaky salt and pepper over the top, and rest 2 minutes.

  4. 4

Scoop the marrow out of the bone in one soft pull. Eat it as a rich spread or spoon it over a seared steak.
