    Pat the filet dry and salt all sides, including the edges. A thick filet needs the sides seared too.

    Heat a cast iron skillet on high until it just starts to smoke.

    Sear 2.5 minutes per side, then stand it on each edge for 30 seconds to crust the sides.

    Drop the heat, add the butter, and baste over the top for 60 seconds.
